Thai Inspired Chicken Meatballs

Makes 20 small meatballs
Makes 10 small patties

500g chicken breast mince
1 teaspoon red curry paste (or to taste)
1/3 cup sweet chili sauce
1 egg
1/3 cup low fat cottage cheese
¾ cup multigrain breadcrumbs
1 tablespoon reduced salt soy sauce
¼ cup coriander leaves, roughly chopped
Drizzle of olive oil for cooking

Place all ingredients in a bowl and mix well. Roll into walnut sized balls or small patties. Place onto a non-stick or oiled oven tray and place in a preheated oven at 180°C for 15 minutes or until cooked through and golden.

Note: The mixture is quite wet. Use baking paper or a silicone mat on a cooking tray to prevent the meatballs sticking.

Suitable to freeze.
