Cheesy Vegetable Fritters

 

Makes 4 small serves (2 fritters per serve)

2 cups grated or diced vegetables as desired e.g. carrot, onion, corn, zucchini, capsicum, baby spinach.
3 eggs
1 cup grated tasty cheese
1⁄4 cup spelt (or wholemeal) flour
1 tablespoon olive oil

Place all ingredients except oil in a bowl and mix well to combine. Heat the oil in a frying pan and add heaped tablespoons of the mixture to the pan. Cook until golden on both sides. Repeat until all mixture is used.

Nutrition information (per 2 fritter serve): kilojoules 850, calories 203, protein 15g, fat 12.5g, saturated fat 5g, carbohydrate 7.5g, fibre 2g.
