Eggs in Sauce
Makes 4 small serves
1 teaspoon olive oil
1 onion, diced
2 cloves garlic, crushed
2 cups tomato passata or tomato based pasta sauce
8 eggs
Oregano, to taste
Freshly ground black pepper
Heat olive oil in a frying pan. Add onions and garlic and sauté until onions are starting to soften. Add passata or pasta sauce, bring to the boil then reduce heat to a simmer. Whilst sauce is simmering, crack eggs into the sauce and season with oregano and pepper. Allow to cook until the eggs are cooked to your liking.
